Corn – Maíz

Corn is a staple in most of the world. It is a simple grain and yet, the amount of things you can do with corn are endless. From corn bread, to tortillas, to corn on the cob, corn is always good and always welcome. I live in Central Florida, the home of Siver Queen  and the Zellwood Corn Festival. We are just spoiled. At the height of the season you can buy corn for nothing on the side of the road.  Silver queen is the most delicious corn I have ever had. It is out of this world.

REGULAR CORN FRITTERS

1 cup corn flour
1/4 cup oil
1 teaspoon anise
2 tablespoons milk
1 teaspoon sugar
1/2 teaspoon salt
1 egg

Mix all ingredients except for the oil. Heat the oil in a large skillet. Add spoonfuls of the mix to the oil. Make sure they are bite size and not too big. Fry until golden on both sides. Remove and place on paper towels. Serve.


MY MOM'S CORN FRITTERS

These are simply YUMMY! They are also very easy to make, if you don't mind deep frying.

1 cup corn meal
1 teaspoon salt
2 teaspoons baking powder
2 eggs, beaten
1 can creamed corn

Mix all ingredients in a bowl. Let rest for about 15 minutes. Heat oil until very hot in a frying pan. Drop by spoonfuls and cook until golden. Remove from oil and place on paper towels to remove some of the oil. Serve hot.
